Spicy Potato Wedges
2 1/4 pounds firm-textured potatoes, such as red or yellow skinned
2 tablespoons olive or sunflower oil
2 garlic cloves, crushed
2 teaspoons flour
1 teaspoon sugar
1 teaspoon dried thyme
1 teaspoon turmeric
1 teaspoon mild smoked paprika
1/2 teaspoon salt
Preheat the oven to 400 degrees F. Thoroughly wash the potatoes and cut into wedge-shaped quarters, without peeling them. Dry them carefully and lay them in a single layer in a large oven dish. Put the oil in a bowl and add the garlic, flour, sugar, thyme, turmeric, paprika, and salt. Mix well and pour over the potato wedges. Using your hands, make sure each wedge is completely coated. Bake for about 45 minutes, or until the wedges are browned and cooked through. Turn them 3 or 4 times during baking. Eat immediately!
